‘Tis the season for roast turkey and cornbread stuffing. But maybe you’re in the mood for something a little different this year. Enter: Chef Victor Villarreal, the creative force behind La Onda on Race Street, with his mouthwatering recipe for coq au vin that feeds the whole fam.
The dish emphasizes French and Latin flavors with Mexican-style chorizo, Mezcal, and allspice. Here’s everything you need to get started + some helpful tips from the chef.
Brown chorizo in a heavy bottom pot on the stovetop, then remove from heat and leave the remaining oil.
Heat the chorizo drippings over medium-low heat. Add the chicken and turn frequently until nicely browned on all sides.
Carefully pour the Mezcal into the pot and wait until it becomes bubbling hot.
Season the chicken with salt and pepper. Add the bay leaf and thyme to the pan and then nestle the onions around the chicken. Cover the pot and let the chicken simmer for 10 minutes.
Uncover the pot, sprinkle the flour over everything, and stir until absorbed. Cover and cook, turning once or twice, for 3-4 minutes.
Remove the pot from the heat and gradually swirl in the wine and enough stock to almost cover the chicken. Add the garlic and tomato paste, cover, and simmer for 25-30 minutes.
Add the calabacita and simmer for 4-5 minutes.
Garnish with chorizo and micro cilantro, if desired, and serve immediately.

Happy Thanksgiving. However you celebrate, make today a day of rest, reflection, and community. We here at FTWtoday are thankful for our city, and the fact that there’s always plenty to talk about — especially when it comes to groceries.
History
There’s a new exhibit opening tomorrow, Nov. 25 at the Fort Worth Museum of Science and History. “The Beauty of Clay: Cultural Works of Mesoamerica” showcases ceramics and earthenware pieces from the collection and features representation of mythical and real animals. 🐆
Drink
Head to Birdie’s Social Club(2736 W. 6th St.) starting at 5 p.m. tomorrow, Nov. 25, for the opening of a new Christmas pop-up. Birdie’s First Christmas will have festive cocktails, photo ops, and lights + is open for corporate happy hours. 🍹
Development

Environment
Winter is coming and leaves are starting to fall around Cowtown. The city is reminding property owners to “leave it on the lawn.” Mulch or bag fallen leaves, rather than dumping them down storm drains, which can lead to flooding and damage. 🍂
Community
Ridgmar Place — a senior living community at 2151 Green Oaks Rd. — is participating in the Toys for Tots drive this holiday season. Drop off new, unwrapped toys by Friday, Dec. 9 for kiddos in need.

If you love this newsletter (and supporting local) as much as we love strolls in Candleridge Park, morning lattes from Common Grounds + Saturdays spent at Westbend (which is a lot) — we’ve got something for you: FTWtoday just launched a membership program. Learn more + sign up. 🎉
Editor’s pick: The results are in — earlier this month we asked you what Thanksgiving food you were most excited for. Stuffing takes the cake with an overwhelming majority, followed by turkey and ham, green bean casserole, and pumpkin pie.
Rebecca and I are shocked — and a little heartbroken — that none of you voted for buttered rolls as they are our favorite. President Biden may have pardoned the turkeys, but I guess Fort Worthians pardoned the bread. 🍞
